Let them (and me) eat cake!
It's a rainy half term, what do you do but make cakes? What do you do but make mistake cakes. We made the usual 4,4,4,2 cake recipe and threw in a little cocoa powder. I had some ginger conserve that needed using up and somehow thought that if you put a little cake mix in the bottom of the cases, then a blob of conserve, then more cake mix that the conserve would stay in the middle... Errr, no, and that's why baking is a science.. I think I'll be thrown off the Daring Bakers before I've even begun... The conserve of course sank to the bottom making for a very sticky mess when you eat them. Tasty though, especially with the dark chocolate on the top and the obligatory rainy day sprinkles! We have precisely none left, so mistake or not they were good...

Disaster or not they look delicious! Learning is always fun and even when something you have tried doesn't work out exactly the way you had hoped, there is always something gained, even if it's only the knowledge that when you put ginger conserve in the middle of your cupcakes it will sink to the bottom!
Are you kidding these look great. Being a part of the Daring Bakers also means learning and experimenting too! So you sell these as "Sticky Ginger Chocolate Cakes!" and they'll be a hit!
Great cakes! And I hear ya about the rainy weather. My little one is dying to get out...but it just won't let up. Perhaps we will do some cooking today. Gotta think of something :)

I think the idea of adding ginger was fabulous - and the sprinkles and golden fluted paper cups are beautiful, too!
They look lovely :) Nigella has a recipe in Domestic Goddess for jam donut muffins, and the jam stays in them, might be worth checking your recipe against for next time ;)

Hi KJ, I've looked at the recipe and very different ingredients with the oil, etc but she put three quarters mix in then the jam then bit more mix so maybe that is the secret. Thanks for pointing me in that direction.

I just passed by and happened to see those cupcakes! Goodness they look good. It's good your having fun experimenting with all kinds of recipes, I hardly ever get to.
