EDIT: It's finished ! Little Foodies and the Daring Bakers Lemon Meringue Pie

Not sure why I felt the need to leave this to the very last minute, it's becoming a bit of a habit.....

Posting day arrived and yet again I still haven't made the LMP (Lemon Meringue Pie). I've read a few things about this LMP. Throughout the month on the Daring Bakers Blog I've seen some stunning ones, some runny ones and well to be honest... meringue scares me, pastry scares me, making lemon curd scares me!

But out of my comfort zone I come - I WILL make the LMP today and I'll post it on time too! I have just under 12 hours and counting!


EDIT: These are in the oven OKAY, OKAY, Please should I ever leave another thing to the last minute have me taken outside and SHOT! I could excuse myself and say it's because of my back and how good I am to have done it anyway, blah, blah... Please order my wings and halo... more blah. But no, it's because I'm seriously good at procrastinating.. I'm tired, can't waffle on properly... Here in pictures is what I've been doing for the last few hours... As well as juggling a few other things... Daring Bakers... sounds about right to me!


I want to say thank you to Jen at The Canadian Baker for hosting this month. Such a good choice. I know that I've learned a lot but I have to sleep on it tonight before I can put in to words exactly what it is. I was afraid of pastry, and it was my first time for making lemon curd and meringue so I was seriously out of my comfort zone today. That can only be a good thing! I know one lesson learned before I go lie parallel and watch television/sleep... I wish I hadn't let it get so brown, I like meringue to be pearly white.

Oh... and is my lemon curd runny? Nope! ...and is it delicious? Yes definitely! Even though I like meringue more cooked than this it's still really good.

oh it looks so beautiful! My mum used to make LMP, i loved it with a real sharp kick in the curd (?!). You are very clever...i really want to bury my face into it. Congratulations!

Your LMP looks great! The meringue is nice and golden brown. I procrastinated too much as well. I started making it at 8pm on sunday... Next month I will have to try making it as soon as its posted.

Me too! Last minute DBer...finished up late last night. I like the contrast with the dark top and the white inside of the meringue. Yum!

Ohhh Amanda, that looks absolutely fab fab FAULOUS! I loved this recipe myself. I have never had a better Lemon Meringue Pie and this shall be the one I use from now on! I think your pie is just lovely! Hope the family enjoyed!

I'm always nervous when I'm given times in a recipe. I normally cut it down by 10 minutes and then 'watch it like a hawk' until it looks like the way I want it too. I tasted mine a little too early also, but that was ok... it was still de.lic.ous.
Looking great... good job.

Oh Amanda, maybe you are addicted to the adrenalin rush of the consequences of procrastination. I do that often ;-)

Your pie looks delicious! I know what you mean about the meringue though. The second time I made this recipe, I used the baking temperature of my old recipe i.e. used a very low temperature (similar to making a pavlova). This way, the meringue gets cooked and also remains light in colour.

Way to go on persevering _ I think I would have used one of those good excuses and gone to bed. Your pie turned out lovely - so glad you didn't have the runny issues so many of us did. Love the step-by-step photos, too!

Such a pretty pie, even the tan meringue 'cuz when you slice a piece it contrasts so nicely with the white inside. Beautiful filling, too. Mmmm.

Well you beat me... I'm still a day or two away from my LMP. I'm blaming it on a sinus infection. This month. But I need to get better about the procrastination bug too. How 'bout we bake February's challenge together (if only virtually together)? Early in the month? :)

I was eating that lemon meringue pie as I scrolled down the page looking at the photo's. It looks wonderful. So much work is involved and then you just have to eat the lot!

Amanda, I don't know where you find the time - this is my favourite desert and all I want to do on the cold snowy morning is get in the car and drive the 350+ miles to your house for a large slice - when we next come I hope this will be on the menu.

Hey! Everything turned out great. I actually like the meringue to be a nice toasty outside. I love that crunchy then soft inside. It's the best. So looks perfect to me- great job!
