Soon there will be a DIET in the meantime, Lemon and Vanilla Cheesecake


This is the first time I've made cheesecake and I think it was a resounding success! It's always been one of those things that I was a bit afraid to make, something about the water bath I guess.

I did a couple of things differently, used vanilla extract instead of a seeds as we didn't have any vanilla pods, made a crushed digestive biscuit base, and I didn't make the candied lemon peel to go on the top after reading comments from readers on the BBCGoodFood site.

That looks delicious ... I once read that the two things most likely to put people off cooking something were "pestle and mortar" and "bain marie" - funny about the water bath, because when you've done it once, you know it's not that difficult (cold water instead of hot?)

My niece brought us a really delicious ginger cake from a recipe in Olive ...

mmm.... Amanda, that looks so good. I thought diet stood for Did I Eat That? Doesn't that mean we can enjoy? lol

If I can have a cheesecake like that once in a while, I wouldn't worry about diet etc! ;D

Don't you just love how once you do something you've been so intimidated for for so long, turns out you really can do it and so well! The world really must have cheese cake!
